SourJoe Pumpkin Bread with Chocolate Chips

INGREDIENTS

Wet Ingredients

500g Pumpkin Puree
200g Sourdough Starter Discard
130g Coconut Oil
300g Sugar
30g Molasses
2 Large Eggs (or Flax Egg to make recipe Vegan)
10g Vanilla Extract
4g Almond Extract

Dry Ingredients

200g All Purpose Flour
6g Baking Powder
4g Baking Soda
25g Corn Starch
8g Salt
10g Ground Cinnamon
1g Ground Nutmeg
1g Ground Ginger
>1g Ground All Spice
>1g Ground Cardamom
>1g Ground Clove

10 oz (286g) Chocolate Chips

INSTRUCTIONS

  1. Preheat oven to 350°F.

  2. Line a 9x13 inch baking dish with parchment paper.

  3. Whisk wet ingredients in a large bowl. Set aside.

  4. Whisk dry ingredients in a medium bowl.

  5. Add dry ingredients into the wet ingredients. Mix until just combined, with no lumps remaining.

  6. Add 3/4 of the Chocolate Chips. Gently mix.

  7. Pour batter into baking dish.

  8. Bake for about 25-35 minutes or until a toothpick comes out clean when put into center.
